What will you do with the leftovers?
3I love turkey soup. Boil the carcass with veggies, then make soup with those curly egg noodles. Even better if you have some leftover gravy to stir in.
Yum, it's worth roasting a turkey just to make soup after.

@thismyusername My granny always makes us take crap. We got home and tossed a bunch of mash taters and gravy. Kept the ham though.

If there's leftover turkey I'm partial to a turkey salad with apples, cranberries, and nuts. Then eat that on sandwiches. A girl at a place I used to work made that every year with the leftover turkey from our work thanksgiving lunch and got me hooked.
@djslack - omg, I want that! Maybe with some seedless red grapes and celery? Sounds so good!
@KDemo Sounds good to me. I think as long as you get turkey, mayo, something crunchyish, and something sweetish, your bases are generally covered*.
(*Within reason. Not responsible for abominations like turkey, mayo, cornflakes, and gummy worms.)

We don't end up with them, really. We do sometimes score a take-home plate from my mother in law's, though.
Mmmm. Followup Thanksgiving Dinner for meals the next couple of days. Turkey sandwiches. Turkey soup. Turkey on noodles. Turkey topped fried mashed potato fritters. Turkey cranberry tortilla wraps... the list just goes on. I keep trying to get my wife to agree to cook two turkeys so there's more leftovers!

@KDemo We used to but haven't come up with a good gluten-free crust for my wife; same reason we don't do the little pastry cups with turkey fixings any more.
@duodec - Seems like @christinewas or @joelmw might know if there is a good crust that's gluten free?

@KDemo There's a few local shops here that do a decent GF crust - but that's upstate NY. I don't currently know of any good nationally available brand. Maybe @Anorion is aware of one?
@Thumperchick If you like bready crust, Kikkikikkick is really great. If you like thin crust, Glutino (common) is pretty okay, but if you can find it, French Meadow Bakery is AMAZEBALLS.

@duodec Put everything into a blender. Add some cold water and ice. Puree until smooth. Drink with a silly straw.
Extended family goes to my s-i-l's on Thanksgiving, which means no leftovers. So the following Sunday I have the kids and grandkids for "leftovers." 12 of the 14 prefer dark meat so I did 12 thighs last week and froze it. Will do a turkey probably Friday and make more pies Saturday. Made five pies today to take tomorrow. Some have turkey, stuffing, and all the trimmings; others have turkey club sandwiches, or open-face turkey sandwiches. Husband and I both really like turkey so there's no problem with leftovers.

@Pavlov - Haha. Is it good? I've been wondering if I should try to start at the beginning and catch up. It would have to be really good, though, to make it to the top of my list of things to see. I'm behind on everything.
@KDemo I've liked it since the beginning, Season two just completely redefined GREAT television for me last Sunday . . . This last episode was just that damn good.

@Pavlov It's very good. It's the best thing that we're watching now, but I definitely like House of Cards and Breaking Bad better, so I agree with your priority, @KDemo.

My mother in all but law packs it into mini casserole dishes and freezes it. Then when she wants a quick meal in the depths of winter/spring, she just heats one up. Easy, and better than frozen TV dinners!

We had lots of sammiches, which I really don't eat much normally. White and dark meat, perky mayo, dill pickles, a little dijon mustard (the son-in-law convinced me to try this), cheddar (again, the son-in-law; I don't usually have cheese with my Thanksgiving turkey sandwiches). On my new favorite (because, really, most of the others suck and I didn't even used to have a favorite) gluten-free bread, which @christinewas and I discovered at the GF and Allergy Expo in Dallas this year. They were tasty.
@joelmw What's wrong with you? No cheese? Unless a sandwhich involves peanut butter and jelly/honey/marshmallow fluff, cheese is a must. So glad my husband could set you straight on that one. The man knows sandwiches, that's for sure.
Mercifully, a Love with Food box arrived, containing a boxed chilli mix that calls for 2 cups of rotisserie chicken. We decided to sub turkey, bringing a much-needed break in the sandwich parade. Though, after a few days, I had actually switched from turkey sandwiches to grilled cheese with turkey on the side. Huge improvement.
