@DrWorm After the water is boiled, it’s kept hot at a preset temperature and ready to use as opposed to waiting for a kettle to boil. Call it a convenience appliance, if you will.
We used a thermostat-relay from amazon with the hot water pot. Probe drops in through the lid, and it maintains the temp you set +/- 1 degree for as long as wanted. Hot pot was ~$22, the thermostat-relay $24, and it also works with the old manual switch crock pot for sous vide.

@HemlockTea It was handed down, the bottom half use to be a bit more vibrant but it was accidentally thrown into a dishwasher and got faded. It’s not my favorite gourd, mainly because of the stainless steel (burns my fingers sometimes) but it’s my work gourd because of the stainless steel (in case I forget to clean it).
@DrunkCat Here’s my work “gourd” The bombilla was was given to me from a coworker who went to Argentina. I got a traditional one at home with silver around the top.

Yep, they’re very convenient. I have several of them myself. Stick with Panasonic or Zojirushi; the lesser brands don’t hold up.
(Most expensive was $15; least was $3 w/o the safety cord … which I found for $0.50 in a different thrift store.)

@DrWorm You can also adjust the temperature of the water- lots of teas are supposed to be made with water below the boiling point.

@f00l No, not for hot water on demand, but as far as I know Zojirushi doesn’t make a sous-vide set-up…
If you can find one of these, get it! Zojirushi is quality.
The blade on it is so good, the ice texture is better than any other shave ice I’ve tried.
