LOTS of good ones mentioned in the comments so far. I’ll post one that is probably much less known but my personal favorite. “Free Beer Song” by Da Yoopers.
A drinking song list without any Housemartins/The Beautiful South? They could fill a whole album with their boozy tunes, in fact I’m surprised they haven’t done exactly that. “Look What I Found In My Beer”, “Old Red Eyes is Back”, “Liar’s Bar”, “Just Checkin’”, etc.
Sirey Petes (from a mispronunciation of Sierra Prieta mountains outside of Prescott, Arizona–AKA Sirey Peaks) tells the story of two true cowboys who grew tired of branding yearlings and decided to go on a drinking binge in Prescott’s Whiskey Row. The author was a Dartmouth educated cowboy, Gail I. Gardner.
Spoiler:
The last line ends:
“Well, if you ever go up into the Sirey Petes and you hear one helluva of a wail, you’ll know it’s the Devil a’hollerin about the knots tied in his tail.”

Though on the obscure side, I think that Louis Logic created the ultimate hip hop drinking song:
one of my favorite drinking songs turns out to be a song that parodies the ills of drinking
Jerry Lee Lewis
was fun to play along with.
His is my best pick.
