But as for honey, I really need to get some beekeeping gear and transfer the wild swarm from the hollow tree out back into a proper hive that I can raid. (Yes, I am a sort of accidental beekeeper right now. They aren’t africanized.)
Lychee honey. Got some in Asia and it was soooo heavenly. You can actually taste the lychee, just like you can taste the orange in orange blossom honey. I miss it, but orange blossom isn’t second-best by much.
Though I still have some cane syrup I’m working through before I can justify purchasing more honey. It’s not as good in tea, maybe, but great for anything else you’d use honey or maple syrup for.
I’ll just say it’s good to have a colleague with an apiary. Almost 15 pounds of honey for $50. Also have a colleague with 10 hens so I get fresh eggs all the time. Scientists are an interesting lot.
My daughter was introduced to a lady in the area that kept her own bees but didn’t sell the honey commercially. She managed to get me a huge jar of it for Mother’s Day. It was the best honey ever and I mourn its passing! I am now in the process of bugging her to get me another! However I am not opposed to trying some of this.
As I mentioned somewhere else, I have an accidental hive in a hollow tree in my back yard, and I’m seriously considering picking up some beekeeping gear and a more usual hive to transfer them into. (My father kept bees for a while, so I have the basics of how-to, but that was almost 60 years ago so the kit is long gone.)

(I got a chance to try regional honey in the ME, and I’ve got to say, the US is completely missing out on this specialization.)

@Weboh Thymian honey from Greece has a discernible and pleasant difference from ordinary stuff, too.
