By and large, not really much of a condiment guy. My taste buds are such that the smallest amount of sauce can overwhelm whatever I am putting it on. I typically pass with any sauce on a sandwich, though I am down for tomato, onion, mushroom and the like.
That makes ketchup sort of the default for me, as I can go with a little on my fries.
Salsa.
Hm. Mayo.
Sandwiches usually have mayo. You can cook with mayo. You can add things to mayo to make it an aoli.

Mustard based BBQ sauce.
Teriyaki. I hardly eat any other sauces and usually just use dry rubs or seasonings.
That orange sauce I get at the hibachi grill. For the vegetables, but I pour it over everything.
