If they’re made with milk, you could be lactose intolerant and would have digestive issues after. They have pills to take when eating such things which help.
My wife has an odd way of making pancakes where she uses oil which makes the perimeter crispy. Throw some peanut butter and syrup on there and it’s the bomb.
If I’m making them, then waffles. (I have this awesome double sided Belgian waffle maker) If I’m not making them, then I probably prefer pancakes but I can’t make/flip pancakes to save my life.

Huevos Rancheros - my go-to favorite, but I’m thinking it’s time to try something different.
Eggs Benedict - another favorite. Depending where I go, I can choose from classic style w/ ham, smoked salmon or smoked short-rib hash w/ jalepeno hollandaise.
Chicken & Waffles - this is what I’m leaning towards only because I’ve never had it before, but it doesn’t sound all that exciting to me. I’d rather have eggs, tbh.
(Also, I know the server at this place and she’ll give me free drinks and conversation.)
Wildcard! - suggest a dish and, if it sounds good and I can find it, I’ll get it!
Not into pancakes. They can be delicious, but cake is a dessert, not a meal!

(I actually stick mostly to iced tea, but I’ve gotten the occasional comped mimosa. Once had to refuse an unasked for but delivered 2nd mimosa because I had to be able to drive home!)

This place specializes in fried chicken and I’ve never had it, so I ordered a 2 piece meal to go that I’ll heat up for dinner.
As you can see, the eggs are kinda tiny, which is why I left not sufficiently stuffed.
This place is attached to a gourmet charcuterie, so they cure all their own meats; that’s “shoulder ham” and jalapeño hollandaise, it was tasty.

2 piece dark w/ biscuit and 2 sauces; honey butter and garlic parmesan. No idea what the 3rd container is (butter for the biscuit, maybe).

So, the rest of the story is that my bartender friend used to work next door, at the charcuterie, where I get the huevos rancheros.
She moved next door to the fried chicken place when they opened it this summer.
Final verdict is that the charcuterie’s brunch menu is much better, so I may have to abandon this bartender and try to make friends with a new one back at the charcuterie…
@tinamarie1974 it’s hard to tell, but that’s one cake that starts out about 12" across, rolled around cannoli cream, and then cut in half. Enough for two. Their “regular” cakes run off the edge of the plate. Come to Rochester and we’ll go. BTW - I’m still waiting on the pizza…
Blueberry pancakes are awesome. If not, waffles with strawberry sauce. (Actually I prefer just mashed strawberries in juice.) But I’m surprised French toast didn’t make the list. Good French toast beats all! A good omelette is up there. Maybe I’m just hungry…

Waffles need to have a crisp. No softies. Pancakes can be soft. Either way they get warm, chunky fruit sauce. No syrup. Yeah, I said it.

Belgian (sugar bomb) waffles are superb. You’ll probably have to make your own.

I voted Waffles because I refuse to eat Eggos after having a Waffle House waffle. Belgian Waffles aren’t the same.
But pancakes are good too, although I’m not a fan of Bisquick batter.
