Shrimp paste or shrimp sauce (xiā jiàng, 虾酱) is made from crushed or ground shrimp. Like fish sauce, it is salted and fermented. ,The flavor is similar to fish sauce, except it is quite a bit stronger and, well… shrimpier.

I love and use harissa and gochujang, but only one of the sauces recommended in this article really sounds like the sambal oelek. The Thai chili paste has shrimp and fish sauce in it, and it sounds good. All the others are just various chili mixtures. I tend not to like the ones with vinegar that much. I wish I could find a sweet chili sauce that isn’t full of seeds.

But fries must absolutely be piping hot, in my opinion.
And don’t get me started on fries that are sogged up/bogged down with gravy or chili or anything gloppy - what’s the point?!
