@mossygreen personally, I love my aeropress, but the number of times I want more than the amount of coffee it can make is too large to ignore the chemex as a possible option.
@ConradHilton When I first got mine, I watched a lot of youtube videos. One was of a guy using it as a semi-french press, who said as an aside that as far as he was concerned it makes a single serving. So I get what you are saying. For me, the small size is a feature, as I am not a massive coffee drinker and don’t entertain.
@mossygreen if I’m making 2 cups (one for me, and one for anyone who doesn’t know what the hell I’m doing) then the aeropress is fine. It’s fast, the quality is great, and it’s easy. Anything past two cups, though, and suddenly it becomes a slog. The chemex seems like the right next logical step for me.
Chemex is awesome for pour over coffee. Have one and love it. Also have a few French presses. And 2 moka pots, and a Nespresso machine. And an aero press. And a few other random coffee makers. Chemex and French press make the best tasting coffee…
@ThatsHeadly Looooove my Aeropress! Easily my go-to when I have time, otherwise the Kitchenaid 1 cup gets used the most. Then there’s the large Bodum French press, usually when company warrants the use. The Chemex, sadly, is still NIB but someday I’ll brave it.

I’ve tried pretty much every method out there. I have an absurdly large amount of kitchen space devoted to storing them all. And 99% of the time, I use my bog-standard drip brewer, because it’s the best balance of quality and convenience I’ve found. (It helps that I buy good beans and grind them fresh.)
@rschauer It’s sorta half pour-over and half French Press. You pour the water over the grinds, stir, and let it steep, then put the dripper over your cup. The coffee drains out, you dump the paper filter and grinds in the trash, then rinse out the dripper cone.

Mexican food done by molecular gastronomy? Here we have a queso foam with jalapeno cilantro spheres and tomato gel, accompanied by spoons made of fried masa that you just eat with the foam.

Chemex was the first totally beautiful coffeemaker I ever got to see.
(Excepting the huge brass commercial espresso machines in Italian espresso bars…)
I had to look it up. It is a pretty device. Looks like a thing I would own but then put on my pantry shelf never to be used again.

I swear by my Clever Coffee Dripper. Easy to use, easy to clean, makes damn good coffee, and cheap.
