Seems a lot of work to me to heat the grill up just to sear something- but if you’re passionate about doing the absolute best cooking you can… I can’t think of anything better than meat that’s been sous-vide and then seared on the grill.
Which reminds me, I need to get my immersion cooker out of it’s retirement… cooked the best meats and used it like crazy for a few years but haven’t touched it in a while.

If you don’t throw your meat from the sous-vide either onto a grill or a sizzling hot skillet you miss the majority of the flavor (which comes from the maillard reaction). It’s a gas grill so it’s no big deal to get it warmed up. If I want to get really fancy I’ll use my “flamethrower” AKA weed burning gas appliance.
Personally I would consider a piece of meat directly from the sous vide to be inedible.
And yes, sous vide to 131 degrees then a total of about 5 minutes on a super hot grill. It was quite yummy!

I feel it’s well worth the effort since the grill is just outside the back door off the dining room area and the flavor difference is one I really like. I can go out there and sear the meat with no smoke in the house while my wife is finishing up getting veggies ready, putting salads on the table etc.
I’d grill year round, but I have at least one child who can’t help but mess with the grill and its constituent parts if I leave it in a place that’s at all reachable, so it’s in the garage, unused, most of the time.
When the weather becomes inclement, but the food is already prepped for the grill, we just position the grill at the apron [or on the threshold of the roll-up door] of the barn/garage to limit interference from the wind and/or wind-driven rain or snow.
It does often require longer grilling times because of the lower ambient temperatures [kind of like the effects of wind chill on living organisms].
However, using the smoker can be more difficult because of the indirect heating it requires/uses.

I remember one time growing up Dad had the bright idea to put a duck out on the rotisserie on the barbecue. It was in the winter in St Louis with snow on the ground and the BBQ was close to the sliding glass door at the back of the house. Due to the fat content of a duck that turned out to be a less than stellar idea. Once the fat started melting and it dropped on the burners it flared up and shot flames almost to the soffit. Thankfully we were able to extinguish the little meteor-looking duck and salvage it by peeling all the burnt skin off and finishing it in the oven.
As for my smoker … it’s electric, so I can plug it up protected from the wind and it does fine even around freezing. Of course I’m in Central AL so that’s not too often, even in winter. (Safety note: use a heavy duty extension cord)

Wow. Those are great. 25 yrs ago my son had a friend (same one that built our railing for the loft) who used to hand make stormtrooper outfits from Sintra (I think). He and a buddy had a flourishing business online. They would buy sheets of material, cut it to the patterns they had created, then heat it and mold it around forms they had designed and built. It was a pretty niche market but they did all right for themselves for quite a while.

No, I already have a tabletop propane grill, a wood pellet smoker and an offset firebox charcoal smoker.
My brother-in-law gifted me our nephew’s wood pellet smoker after he died because he [my B-I-L] wasn’t going to use it.
Our nephew died on 9/11/20 due to self-induced asphyxiation and depression- ironically after starting Zoloft the week before- unfortunately, the black box warning was prophetic.

I have a fold-up grill sort of like this one, but the main part is V-shaped instead of box-shaped. The problem with mine and the one here is that the grill height is not adjustable and the grill is just too damn close to the hot coals to not burn things. Yes, I could make a smaller bed of coals, but then I’d have to reserve one end for adding coals and burning them down before pushing them to the cooking side.
What I really want is the Snow Peak Takibi grill
but it’s outrageously expensive ($320!) like most Snow Peak stuff. I’m sure it’s the usual high quality Snow Peak is known for. I did see a knock-off for $100 in a social media ad, so I’ll have to check that out.
It looks like you could [if materials and skillset are apropos] make some extensions for the height adjustment uprights to get some further distance from the coals.
I looked at the Snow Peak merch and you’re right, it’s pretty pricey.
