In Japan or in some good restaurants here you would expect freshly-made ramen (I.e. not the budget college-student kind). Same with Soba which really should be fresh buckwheat soba.
Now I want some.
Noodle texture and seasoning packets are of equal importance. I’m edged toward seasoning, but bad noodles are only made tolerable, not necessarily tasty, by an underwhelming noodle.
I married into a Japanese family and every time I’ve had Ramen it’s been fresh. The best I had was when I was in Japan itself it’s not the crap that comes in the little packages , that are five for a dollar, it’s real good noodles made with real good soup base from scratch. Otherwise it’s all crap no matter how many flavor packages you put in or how much hot sauce super over the top.

I get millet and brown rice ramen from Costco. Great consistency and no “flavor packets”. Works great with soup or as a noodle side dish.
