@casezero Look at the grain and align accordingly, but at this thicknes your choices are cross or rip, not end. You really only get end grain on butcher block, and most of those aren’t made that way either. It splits too damned easy.

If the cutting board cracks or splits and you still use it and food goes in between the crack, then you may have micro amounts of glue getting into the food and even then it’s not that bad. It is by no comparison worse or even equal to a plastic cutting board.
Besides the fact wooden cutting boards are naturally antimicrobial will plastic is not, all those slices in your plastic cutting board are holding onto bacteria that does not go out. Besides the fact there are microplastics going into your food. If you use a brand new plastic cutting board each time then you may be safe. But wouldn’t cutting boards are the better option 100% of the time.
