i’m not a big breakfast person, so it was usually just coffee with heavy cream. boiled eggs were a quick go to if i was hungry. i usually boiled a bunch on sunday so that i’d have them ready for the week. if i did want something fancy, i’d make cream cheese pancakes. 2 eggs, 2 oz cream cheese, 1tsp cinnamon, 1tsp vanilla extract… blend until smooth. cook about 30s on each side. they’re more flat and spongy than a pancake. usually topped with whipped cream. (i made my own to keep the sugar down) there’s also sausage and bacon. even made my own breakfast sausage for a while there.
lunch: this was usually leftovers from dinner. not quite sure what you mean by lunchbox style.
dinner: some kind of fatty meat. lots of fish (salmon is awesome), fattier cuts of beef, and dark meat poultry and leafy greens - spinach was my go to green. for any leaner meat, i’d always top it with butter.
i’d always make extra servings at dinner since i knew i’d be eating it for lunch. this one was one of my favorites since i could make a large quantity and eat it over the next few days. obviously, don’t put it on a tortilla.
there’s a million keto recipes out there. i’d suggest avoiding any that use artificial sugars, and least for the first 2-3 weeks. for me, i found that having anything sweet really amped up the carb cravings. so, i just avoided it for the first few weeks.

another option is to make a savory version of the cream cheese pancakes. swap out the cinnamon and vanilla for onion powder, garlic powder, salt and oregano. bring some salami and cheese and make rollups.
tuna salad, chicken salad are good options as well.
a lot of this is just getting creative with what you already eat and figuring out how to reduce the carbs. for instance, instead of pizza, i did meatza. used a mix of hot and mild italian sausage as the base. it could also be used for lunch if you don’t mind eating it cold or at room temp.
@CaptAmehrican When I worked outside with neither as well I bought one of those insulated bags lunch bags with the roll down and zipper tops (had both - they key here is how thick is the insulation and can you shut it with as little gaps to the outside as possible along with as little spare air space inside as possible) and an ice pack. Even in 90-100 degree heat the stuff stayed cold or cool enough for about 4-5 hours although by mid afternoon everything was melted. I had two and would rotate them so they were in the freezer longer between use.
I’m messing with it. Prob not pure enough, but hey! Learning curve!
Lots of chicken salads: no dressing except herbal vinaigrette type. No mayo etc.
And some other keto type experiments.
I’ll say this much: so far, after eliminating grains, I feel better. And doing this totally controls blood glucose levels.
(Should mention: don’t know much about type 1 diabetes, and don’t have type 2).
I think @therealjrn has experience with this approach to food choices.

Not all fats are bad. Fats are satiating and if you’re doing it right, your body is burning fat rather than sugar for fuel. I do the low carb but not strictly Keto. Keto is a natural progression from low carb tho.
If one is wanting to take one’s lunch, may I suggest a small cooler bag? When I worked outside of the home, I have a carried a little “Swinger” cooler.

Mayo is fine. lots of meat, cheese, eggs. cruciferous veggies, if you like brussell sprouts, brocoli, you have a leg up.
My personal opinion (from experience) learn the carb level that works for you. Don’t take the books as gospel. but don’t add bread to make up the difference,. But means you can maybe have onions or the occassional other vegie.
I made my own mayo, with olive oil and actually white balsamic. balsamic is another no-no but small quantities are okay for most people
consider a box of the dip sticks, to help learn what works.
I missed fruit more than anything else, and carrots actually, lol. lost about 45 pounds and then came covid.
things i liked:

crustless cheeseburger quiche - there are multiple recipes out there.
things i did okay with but
carbulose flour - have to learn how to use it.

aint putting butter in my coffee, lol
did okay with proteinshakes (low carb ones) protein bars too. might be a lunch option
