(Almost all my small kitchen appliances were from thrift stores in at least good condition, if not better).

@mfladd rule of thumb–if you can cook something quicker than it would take to get the IP to come to pressure, don’t bother with the pressure cooker.
@narfcake Ever since you started bragging about your thrift store scores, I’ve been haunting the ones around here. All the appliances have been nasty, broken and/or 30 years old. However, I bought a pashmina shawl, a silk jacket, three designer tops… This is not going well.

All you have to do is saute the meat and vegetables with this thing (it is an option), and then push the chili button.

At home it’s rare that I’m not pretty pure veggie. (Don’t tell, not safe here.)
I discovered the instant pot when I told my wife I wanted to get a rice cooker to make a giant pancake.
Apparently rice cookers are incredibly versatile. She said I should get an Instant Pot, they’re all the rage and cook rice. It wasn’t the solution I was looking for at the time, because it doesn’t cook the same way a rice cooker does (I was not successful with the giant pancake). But it was a fortuitous confusion because it’s sooooo much better.

I can’t recommend enough The Modernist Cuisine at Home. It’s got a heavy focus on the science of cooking, particularly showcasing pressure cooking and sous vide. I recently got a sous vide too, so I’m very excited

Just a small, short rhapsody. Last night I tried skinless, boneless chicken breasts sous vide, using a ziploc. I heated enough water (using saute) to cover it, clipped the top to a small spatula that I left in the water just to make sure it didn’t sink or leak. Turned it to ‘keep warm’, turned the bag over a couple of times, and 60 minutes later pulled it out. Wonderful, juicy, cooked all through, incredibly tender, no shrinkage, no dry spots on the ends. Served it sliced, with (packaged) gravy and mashed potatoes. No knife needed. Not chewy. Leftovers today made the best chicken salad ever. Wow.
