Terrible coffee is part of the disaster relief field work package, so I’ve come to find the taste somewhat comforting. Every Incident Command Post not staffed by hippies or That One Guy™ who happened to bring his full stock of serious gourmet coffees and multiple espresso machines has had terrible coffee, and everyone lived on it.
I spent a summer abroad living in a hostel where the daily “Continental breakfast” was a cup of Nescafe and a bread roll. So I have a certain nostalgic fondness for instant coffee. Also just bought some to make Dalgona coffee. But generally, hell no.
I do “like” Starbucks Via when there is nothing else available, like air B&B with the family last year and I’m the only one who wants coffee in the morning. I always throw some Via in my emergency kit that I pack on every overnight outing. Plus like others said, it’s great as an additive to recipes, especially chocolate cake or brownies.
Instant coffee is good for baking, but I wouldn’t likely drink it unless I were falling over tired, needed to stay awake, and had zero other caffeine options.
There are actually decent (not excellent) non-grocery store instants out there these days. They are not like folders or nescafe, but use a different process and packaging. Most of them are much more expensive and made for specialty coffee houses.
Some that I know of, I am sure there are more:
Add some to chocolate cake batter, and it makes the cake better. That’s the only saving grace…
Um, what’s the iced kind you order from Sheetz that’s more chocolate than anything else – 'cause that’s what I drink every once and awhile.
Actually, when traveling we pack Starbucks ‘Via’ instant coffee with us. It’s better than some motel coffee.
@daveinwarsh That’s what I use for instant coffee. It’s fantastic when you’re feeling lazy (we only have stove top perculators).

It great as an ingredient in recipes to give a coffee flavor, but for the originally intended purpose? Never.

If you spend enough money and don’t put in too much water, some instant coffee tastes like coffee.
Instant coffee? I don’t drink any kind of coffee. Coffee, my friends, is but a crutch for the weak of will.

I would rather get my caffeine from chocolate. All coffee tastes terrible.
not to drink as a regular cup of coffee… but to make whipped coffee atop ice and almond milk… not bad at all.
