A combination of portable Nintendo systems (3DS, Switch, Game Boys of various generations), staring out the window, and very occasionally, sleep. (Usually on night flights)
Music through good quality headphones is also a must, especially when the music syncs up with various segments of flight.
But usually I’m too anxious to put my mind into anything remotely complex.
Not that I’m worried something will go wrong. Just general agoraphobia and being surrounded by people, I guess?
@phendrick I haven’t flown since 2016. But at that point I didn’t have any trouble with my crochet hooks. I made sure the scissors I brought were kid scissors, too.
Personally, I aviate, navigate, and communicate. I check weather, and if on an IFR flight I talk to ATC and listen for my tail number with one ear as I move from sector to sector.
I switch tanks when needed and monitor engine instruments and all the other things a pilot must do, including watching for traffic as one midair…well, can just ruin your whole day. But mostly I just watch the DME or GPS tick down the miles to the destination, the next waypoint or the next intersection or VOR.
And in those glorious moments, when all tasks are done, the aircraft is stable, in trim, and on course, I just enjoy being above it all watching the landscape slowly move beneath and any cloud layers or weather ahead. I look forward to the challenge of landing at my destination, but I’m not so bold (cause I’m old and there are no old, bold pilots) of changing plans if weather or circumstances dictate.
I’ve seen often enough a pilot’s “glory,” which relatively few people on Earth have ever seen, and it never ceases to astonish and amaze me. If you don’t know what it is, search the Internet for a picture.

Knitting. I’ve found I can do a mindless project long after I can’t handle sudoko or reading. I continue to be amazed the airlines let me carry on knitting needles - tiny sharp pointed ones, regular ones, big thick club ones.
Pace the aisle.
Oh yeah, and think hateful jealous thoughts at those who can sleep.

Unless I’ve just bought a new book that I really like, I get bored with the stuff I brought along, and nod off.
i don’t fly because i don’t care for travel and i’m fortunate to not have to fly for any other reasons.
I usually split my time between having a panic attack and screaming.
Take 2 Xanax and wake me up day after tomorrow.
