Good quality bread. Lightly toast. Butter BOTH sides of both slices with quality salted butter and start frying them in the pan over medium-low heat. After a minute flip both slices. Layer a slice of quality cheddar cheese, a sprinkling of good bacon bits, then another layer of cheese, on one side and top with the other slice of toasted bread. Fry until cheese is melted and the buttered toast is perfect golden brown. If necessary drop a pat of butter on the pan and flip the sandwich.
Alton Brown has an alternate where he literally grills the cheese off the bread then layers it on. I prefer the above method.
For the past 5 or 6 years, on Christmas day, I go crazy and buy ridiculous ingredients and have a fancy grilled cheese meal. That’s maybe not quite in the spirit of Grilled Cheese Day, because I guess those are more like panini once you add enough non-cheese ingredients, but it still feels appropriate. Went to one of those grilled cheese food trucks on my trip to Portland in February. That was one of the best decisions of my life!

My favorite variation is Jarlsberg cheese on English muffin bread. mmm…
But keep that Kraft single/Velveeta/ect. sludge away from me!
They say the trick is to use mayo instead of butter… I’ve never done it, but that’s what they say.

If you dont have a grill…
Microwave Smoked Gouda cheese steak sammiches.
2 slices of bread. Preferably fresh, fluffy highly processed white bread.
Make toast. Or not.
A thick slice of smoked gouda. Or regular gouda. Thick like a steak. A finger-width is good enough.
Buttering the bread is optional. If you do, the cheese won’t “stick” to the bread as good.
Microwave on high for about a minute until you get that gooey gooey goodness.
You’re the chef! Adjust as you like and stop when you find what works.
Bread, butter, and cheese are all already salted.
Enjoy. Perfect for college dorms and studio apartments.
