Ok. So I have a 2 parter. What food challenges do you have that are close to you. And 2nd would you sponsor someone to do something crazy like complete one?
1st up we have Ben &Jerry's 20 scoops of ice cream. 4 whole bananas. 3 cookies 1 brownie 2 scoops of 4 different toppings. 4 servings of hot fudge and Carmel Nuts and other things...
Locally, we have the Kookamonga burger which is just a ridiculous size burger (4 LB beef, 7.5 lbs counting bun, condiments, and fries) that you have an hour to finish. For nearly the entire first year, nobody could do it and the first time a pro competitive eater (Patrick Berliotti) came to town to attempt it, he finished it in less than 12 minutes (and subsequently came back and did in less than 8 minutes). Currently, about 25 people have done it including a few regular Joes who almost always take over 50 minutes. 8-time Nathan hot dog champ Joey Chestnut did it 00:07:36 and 2015 champ Matt Stonie polished it off in an astonishing 00:04:45. Adam Richman from "Man vs. Food" failed miserably at the challenge.
Locally we have a burger place called Fully Stacked that has a burger challenge. 30 minutes to eat all the burger and fries and you get it free, or 15 minutes to eat it and you get $100. You must choose beforehand.
Every time someone completes the challenge it goes up by one patty.
Here's a video of a friend of mine doing it a while back, at 13 patties. Last time i asked the challenge was at 14 patties, and that was over a year after this attempt.
This attempt was made during a pub crawl, and the video likely contains some NSFW language.
Also, we have a Tom+Chee that has a Baker's Dozen Challenge where you eat a dozen grilled cheese donuts plus a thirteenth fancier, dessertier grilled cheese donut. I've never been impressed with that place, though, despite how much I want to love it. It's also kind of weird that they make you buy the challenge ($36 I believe) up front and then refund you if you complete it, although I guess for a place where you order at the counter that's how they'd have to do it.

Calmungo from ramuntos.
calzone is filled with lots of cheese and 3+ toppings
There are many different meats and vegetables to choose from
It is served with a large marinara sauce to dip the crust
The 5.5 lb challenge has a 45 minute time limit.
I challenge myself to make three meals when I get home at 8.30 every night and not impale myself on a chef's knife as I fall asleep. I'm ok at it.
