A good corned beef brisket and colcannon on day 1; leftover meat goes to admittedly-non-Irish Reubens on day 2. There’s rarely enough to also support a corned beef hash, bit that is the trifecta.
The family lore says that my Welsh ancestors came to America to find jobs and the Irish ones came here to get away from the food. I honor them on SPD by eating pizza and tacos.
@rockblossom I drove a stick shift Jeep through Wales on my way from southern England to Chester. I had to stay on the correct side of the road, shift with my left hand and deal with Welsh road signs that had 45 consonants in every word. But I lived to fight another day Me and my OCD had a discussion the next day. Heh.
@capnjb You have my admiration since I could never bring myself to drive in Leftland. I had a bad enough time just walking and crossing streets without getting flattened by a lorry or having a nervous fit. But being a passenger was sometimes worse.
Long ago I was in school in Omaha, where a classmate of mine was an exchange officer (Army) from Australia. When I drove him around Omaha, I swear there were claw marks left on my dashboard. I said: “Does it feel like you are in a nightmare where you are in the driver’s seat, but there’s no steering wheel or brakes?” When he gave a sick nod, I said: “I know exactly how that feels!” as I accelerated and made a quick left turn. He showed his gratitude the next day by presented our group with a stack of authentic Aussie vegemite sandwiches.

I do a steak and Guinness pie in puff pastry and recently tried it in single serving size. Lots of work but it was yum

Oh, and I just celebrated 20 years with an Irish woman and I’m still alive… so… yay!
@capnjb That looks delicious!
