So many! I make a quince and apple which basically has a soft layer of membrillo at the bottom and then thinly sliced apples arranged decoratively and that gets a bath of bourbon or scotch caramel and topped with pecan praline. SO stinking delicious. And it’s pretty balanced so it’s not overly rich.
I’m actually about to make a batch of membrillo from my quince this year if anyone is interested.
I’m not crazy about pumpkin pie, it’s okay - but I found a recipe for a pumpkin chiffon pie that has a crunchy crumb crust with coconut and pecans in it and that’s wonderful!

Mincemeat (preferably with actual meat - and definitely with brandy or rum!), Rhubarb (w/o the contamination of strawberries), and Elderberry.
Two main reasons - I like them, and nobody else does!
