Wow, this is a tough one. Of that list, I probably would have said My Neighbor Totoro. Miyazaki is so good though as Spirited Away, Princess Mononoke (my first anime ever btw), and Castle In The Sky are also terrific (been meaning to watch Castle of Cagliostro) .
As mentioned above, Ninja Scroll is also really good and I am sure I will see and think of more movies later.
EDIT: I see Grave of the Fireflies listed. Also good, but hard for me to watch a second time.
As far as not on the list, I’m thinking Perfect Blue and Paprika - both from Satoshi Kon (been meaning to watch Millennium Actress).

So many to choose from. Many have already been mentioned, but one of my favorites is Macross in Clash of the Bionoids. That along with the Robotech series sort of defined my childhood and became my adult obsession.
