@brhfl I actually love beets. I have a Harvard beet recipe which has been handed down and is the best. I know it is not chips, but the beet comment really got me desiring them again.
PArsnips, apples, Carrots are all ok... I really liked sprinkling a little cinnamon on the apples... but I now want to try other things... Parsnips and carrots were pretty good actually...
I've tried both dehydrated apples and banana chips. Apple chips are sold like potato chips in different flavors including cinnamon at many supermarkets. Banana chips I've eaten usually come from a health food market like Sprouts or Whole Foods.
I have had banana chips as part of a health food snack with nuts and pineapple. But in South Florida, plantain chips are a part of the local cuisine. It is the appetizer of choice in most Latin restaurants.
From the look of that mandolin, I'd say finger tips.
