So I have too many zucchini I am sick of zucchini. Please give me your best recipes for zucchini .
Also given how hard pumpkins are to grow and how easy zucchini are why don’t we carve zucchini?
Okay so. Small story time because this needs to be said.
Imperfect Foods is amazing (not sponsored,) and they had zucchini available. Yay! We love zucchini here. I ordered 2 (two. one. two.) zucchini.
Imperfect delivers my box. I open up the box. These zucchini are kaiju sized. They could probably be used a blunt instruments. I can’t even fit them in my veggie drawer. They have to have a section of the fridge to themselves. The Horde, who have never found a vegetable they wouldn’t immediately try to chew on, are hiding from these monsters.
I’m sitting here with these zucchinis and sobbing. I see my future. Its filled with zucchini. It’s a bleak future.
Anyway, thanks to these recipes I don’t curse any time zucchini is mentioned:
@mimikyu I have a similar story with Imperfect Foods and leeks. I selected a single bundle of 3 leeks, but they put 3 bundles of leeks in my box. the result was so much leek quiche, leek soup, fried leeks, etc.

Oh… And did you know that originally it was Turnips not Pumpkins that were carved. Carving Turnips goes back to before Europeans established permanent settlements in the Americas. Naturally Pumpkins are bigger and better to carve than Turnips.
Grilled with olive oil, cracked pepper and kosher salt is my favorite. I try and use some wood chips or chunks and zucchini take smoke flavor pretty well.
@mschuette Seconded - S&P and EVOO, dredge slices the long way, and on the grill. 1/4" or so thick. Also excellent are to brush with the same S&P and EVOO mixture, some whole, washed green onions. Grill till the green parts wilt or even until they go crisp. Then grill some (with same S&P + EVOO mixture) Bronzini, snapper, Redfish, Perch, Mahi Mahi, or other light white fish.
SWMBO runs hers thru a spiralizer and fixes it like spaghetti (no points on WW). It is actually pretty good that way, and as previously mentioned:
grilled/roasted
baked into zucchini bread
and as ratatouille. BTW never heard of imperfect foods so looked them up. Sounds intriguing, but no local service.
@chienfou I dug out the spiralizer and made some zucchini pasta a couple nights ago. I had forgotten how good it is! It was a big hit - I will make it again soon as the zucchini are coming in right now in the garden.
My favorite sweet recipe is zucchini bread. This year I planted and harvested a crap ton of cucumbers - used that instead of zucchini - it was pretty good!
Another good option for zucchini is to ding dong ditch your neighbors
Wash veggies. Don’t peel. Slice 1/8 - 3/16" slices of zucchini, yellow squash, onions and slightly thicker slices of Roma (or other firm)tomatoes. Stand vertically in alternating rows in a oiled or sprayed 8x8 baking dish. Drizzle with olive oil. Sprinkle with Italian seasoning, garlic powder, lemon pepper and sea salt. Follow with shredded mozzarella. Bake 375 about 30 minutes to desired firmness. Even non squash eaters like this.
When I’m overrun with zucchini, I grate them thru a food processor, and bag them in 2c portions in freezer ziplock bags. That way, i can just thaw a bag at any time and plop the whole thing in for zucchini bread. Or cake, or whatever recipes you can put it in.
I can only imagine what people would carve zucchini to look like.
Not good for where people trick or treat.

The only 2 ways I like zucchini are in chocolate zucchini cake and zucchini bread.
