Fresh cased pork sausage on a medium/rough grind with a little white pepper, chili flake, cardamom, fennel fronds and oregano. Pan fry fresh apples and thinly sliced fennel with a tiny bit of Dijon. Throw them in a bap lightly veiled with good salted butter and bob’s your uncle!
@sillyheathen That sounds great! Fennel and pepper flakes are mandatory I’ve got a meat grinder that I use far too infrequently. If I’m planning on smoking a pork butt and there is a good deal on a cheap beef roast I’ll grab both. When I trim the fat cap on the pork shoulder, I toss it in with the beef roast and run it through the mill. Beef burgers cut with pork fat are pretty tasty
