As a confirmed boardgame lover, I feel the need to warn everyone that these are (probably?) really terrible games. Two of them (:59 Seconds and Bing-Oh) managed to score under 4.5 out of 10 on BoardGameGeek. That’s… really bad. BGG users are generally more forgiving than even IMDb is for movies. Imagine how bad a movie would have to be to get a 4.5 rating on IMDb. These are worse than that. They barely qualify as “games” at all.
Skribble Dash actually has one moderately positive review, so that makes it the gem in this lot.
The last one, Risk & Reward, appears to not even have a listing on BGG. That’s basically unheard of. I’m almost tempted to buy this set just so I can create the BGG entry for it.

Some review videos from Shut Up & Sit Down laying out which of the publishers’ games they like & don’t:
Button Shy Games (~30 mins, with time stamps.) (Why I Otter -not covered in this review- is a good two player trick-taking game from them, but you will have to buy a print-and-play version)
Recently I’ve been enjoying Mottainai and Seven Wonders Duel quite a bit, but those are both a bit more intense two player games than the above.
BoardGameGeek has a “best with X players” field for each catalogued game. A lot of games try to shoehorn in a two-player variant that doesn’t end up working well, so that field is a lot more useful than “playable with X players”.
Seven Wonders Duel is great, full stop.
Oink Games are great! Original, compact, and well made. But the ones I have tried are party games involving secret knowledge, which never work for two players.
One more thing – cooperative games involving character classes, like Pandemic or Forbidden Desert, aren’t great with just two characters. But nothing’s stopping you from playing multiple characters to ensure a balanced game.
Schotten Totten is one of my all-time favorite two-player card games. (I actually prefer the re-released version called Battle Line, but that appears to be harder to find; Schotten Totten is readily available on Amazon.)
Another classic two-player card game is Lost Cities - that might be a great place to start as it really is very simple but still hides a decent amount of strategy. (Note I’m talking about the original Lost Cities card game; there’s also a Lost Cities - The Board Game which I haven’t tried.)
Some of the Button Shy games do look great (and a few look kinda meh); I’ve ordered several but haven’t had a chance to actually play any yet.
I highly recommend Star Realms: Frontiers since it’s a great two-player dueling game, but also has variants in the box for 3- and 4-player games, solo, and co-operative versions.
There’s also a lot of co-operative games that play well at 2 or more than two players. I highly recommend any of the Legendary or Legendary Encounters games, which are IMHO at their best at 2 or 3 players. If I had to pick specific ones I’d suggest Legendary: Buffy the Vampire Slayer and Legendary Encounters: X-Files. The “classic” version is Legendary: Marvel which is also excellent and has a huge number of expansions if you get into it.
I could go on all day, but since all of the ones I’ve mentioned so far are pretty mainstream, let me recommend a much less well-known one: Crimson Company. It’s a really neat two-player duel - it’s a little bit similar to Schotten Totten mechanically, but it’s got a lot of really interesting card abilities that make it a fascinating puzzle to play. I wish the original base game was readily available since it was quite cheap, but there’s an overproduced “Collector’s Edition” on Amazon for $38 which includes a few expansions. There’s also a Kickstarter for the next expansion going on right now if that kind of thing interests you.
Oh, I can’t forget BattleCON… and Bunny Kingdom! And Queendomino… oh, and roll and writes! On Tour … Railroad Dice … Welcome To … and bigger board games like Architects of the West Kingdom… wargames! Tide of Iron! Heroes of Normandie! Gah! Ok, I’m really stopping now. But let me know if you want any more recommendations, I live for this stuff.

Actually, the wafels weren’t bad; I had both the authentic Dutch ones and the weird Canadian healthy Poop ones. I still have some left and they are probably about to “expire,” but honestly those things are good for a long time in individual sealed packets.
