It could be up there in the high 50s, low 60s on the Rockwell scale. Or it could be so soft that cutting veggies makes it dull.
I’m thinking probably the latter, but if the actual steel is halfway decent, I might purchase.
My guess is its probably X30Cr13, which is okay for cheap steel, but not actually all that great.
It sometimes gets sold as “Japanese Steel” because a Japanese company supplies it, but it’s not that great.
@harveydanger these are Global copies. If they are anywhere as nearly balanced as the true thing they’ll feel good in your hand at the end of a long shift. i doubt if there is sand in the handle so probably not as comfy.

That is the point. You don’t want to be holding a comfortable knife otherwise you might actually have to cook something. The all steel handle is built for those who just want to pick it up every now and then saying here’s a gotham steel. Also, it being placed in a counter top block for looks will also be acceptable. This is based on the same concept fast food dining areas are based on. Make them uncomfortable and they won’t stay long.

FYI, if you like knives similar to this but don’t want to buy Global brand, Ikea surprisingly has similar high carbon steel knifes under their 365 branding. If you go such a route, I recommend skipping the 3-knife set and just getting the vegetable/bread/pairing knives individually - that’s all ya really need.

Ah, Gotham Steel is used in non-stick pans. No wonder they are sharp, they just non-stick slide right through.
